Last night I got busy in the kitchen making some very tasty candied almonds and cashews and I thought there is still time for you guys to make some if your looking for a yummy snack or a little gift to give family and friends. The great thing about this recipe is its super easy and I'm sure you would have all the ingredients at home so its not too late!!
These nuts are gluten free, vegetarian and paleo so good for most peeps, and if you have a little jar to put them in perfect for gifts : )
Almond and Cashew Cinnamon and Ginger Candied Nuts
(makes 6 x 500ml kilner jars)
5 cups raw whole almonds
5 cups raw whole cashews
4 egg whites
1.5 cups ginger coconut sugar - I used coconoms
2 Tbsp cinnamon
1 Tbsp salt
I made mine in two batches as there are a lot of nuts to cover!
Preheat oven to 180.
In a mixing bowl put 2.5 cups of almonds and cashews.
In a separate bowl add 3/4 cup sugar, 1 Tbsp cinnamon and 1/2 Tbsp salt, mix it up.
Whisk two egg whites until slightly frothy.
Pour sugar mix and egg whites over nuts and mix until all the nuts are coated.
Line a large baking tray with parchment paper and pour in nuts, level them out and put in the oven, time them for 5 minutes, take out and stir, continue to do this until the nuts are slightly browned.
Once browned remove and let them cool completely. When they are cold use a blunt knife to break them all up and then either eat or fill jars.
Restart the process for the other half of your nut mix.
These turned out perfectly, the egg whites give these a great crunch and I just love the taste of roasted nuts especially when there is a little sugar and salt involved!
