Hello all, did you have a good weekend? Mine was pretty low key in a good way. I worked Saturday in the shop then went to a friends for dinner which was fab. She always puts on a great spread of food and I walked home comfortably stuffed! Sunday we lazed about in the morning then went food shopping before going to visit Dale's sister's boyfriend in hospital, he's not very well which isn't good. We all have our fingers and toes crossed that he will get better very soon. Sunday evening was spent watching a film and eating a very tasty dinner, I roasted a butternut squash and filled it with spicy mince which is pictured below. I have been enjoying warmer foods lately, now the weather has really cooled the hot food is in full flow : )

Vegan and gluten free pancake stack from my local health food store. This was indian spiced and filled with yummy veggies, I'll definitely be keeping an eye out for this next time I am in need of lunch at work it was so good! I think I'll try and recreate it myself in fact.

Last nights dinner, chilli and garlic roasted butternut squash filled with spicy mince and veggies. This was awesome and a massive thumbs up from Dale so I am sure this will make itself onto the menu again!
I do love this change of season and all the warming foods that come with it, I have still got to get myself in gear and use my slow cooker which will happen honest!
