New Recipe: Gluten Free Chai Spiced Cookies with Lemon, Goji Berries and Chia Seeds

Happy Saturday readers I have a treat for you today! You may have seen earlier this week I posted a few pictures across my social media sites of some yummy cookies I had made last weekend. Well folks today I have the recipe to share with you and its good'un!

I have been loving all things Chai at the moment, latte's when out and about, cakes and now cookies. There is something about the mix of spices that is warming and very comforting this time of year, don't you think? With that in mind I decided to make my own chia mix up and bake some cookies to feed my craving. Here is the mix of spices I used:

Chai Mix Recipe:

2 tsp ground cardamom
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground nutmeg
1 tsp ground ginger
1 tsp ground allspice

And now for the cookies....


140g Almond Flour
110g Gluten Free Oat Flour
2 tsp Chai Mix
2 Tbsp Chia Seeds
1/4 cup Goji Berries
1/2 tsp Bicarbonate Soda
1/4 tsp Salt
1/2 cup Coconut Oil, melted
1/4 cup Maple Syrup
1 Lemon, zest and 1/2 juice


Preheat the oven to 180 degrees and line two baking trays with parchment paper.

In a large bowl combine almond flour, oat flour, chai spices, chia seeds, bi carb and salt.

Stir in liquid coconut oil (melt first if needed), maple syrup, lemon zest and juice of half the lemon, mix well then finally add the goji's.

Place mix in fridge for ten minutes.

Roll tablespoons of mixture into balls and place on baking trays, press down gently with a fork to make a pretty pattern on top.

Bake for 12-15 minutes or until golden.

Remove from oven and allow to cool completely before tucking in! These will keep for a couple of days in an airtight container...if they last that long : )

These cookies are not only gluten free they are filled with healthy ingredients so they are guilt free too, you can enjoy them without thinking your being 'bad' even if you eat the whole lot within 24hrs......with help of course!
