Recipe: Gluten Free Mango, Coconut and Chocolate Muffins


With the weather so angry outside I couldn't think of anything better to do then bake. I don't know about you but I find baking quite comforting and when its blowing a gale and thundering outside a warm muffin teamed with a cup of tea is total bliss: )


I have had this apple and mango puree in my cupboard for months now and after some browsing round Pinterest I found the perfect recipe that I could change around to include the puree. You can find the original recipe here which is perfect for Autumn as it originally used pumpkin puree.

Gluten Free Mango, Coconut and Chocolate Muffins


Ingredients:
(makes 10 muffins)

1/2 cup coconut flour
4 eggs, at room temperature
1/4 cup softened butter
6 Tbsp mango and apple puree
2 Tbsp rice syrup
1 tsp. ground ginger
1 tsp. vanilla extract
1 tsp. apple cider vinegar
1/4 tsp. baking soda
10 squares dark chocolate  

Method:

Preheat the oven to 350 degrees and line 10 muffin cups with liners. Stir together the coconut flour and eggs until a smooth paste forms. Stir in the butter, mango and apple puree and rice syrup. Then mix in the spices, cider vinegar and baking soda. Divide between muffin cups and before putting in the oven put a square of dark chocolate on top of each muffin. Bake for about 25-30 minutes, until golden and the top springs back when lightly pressed.

Enjoy with a cuppa!


Now these look a little well done I know but they actually came out perfect, they are not very sweet due to the rice syrup but the chocolate adds just enough, for me anyway. You could use maple syrup or honey of you like a sweeter taste. If I'm honest you can't really taste the mango that much but these muffins are light and fluffy and for a first try I am very pleased.

  1. I'm a plain blueberry muffin kinda guy, maybe with some streusel on top. But that's all I'm asking.
    However, I'm intrigued by these mango/apple and choco muffins...definitely worth trying!

    1. That sounds like a goooood muffin! Yeah these turned out tasty but I need to work in the mango flavour...maybe actual pieces of fruit would be good....
