Healthy Savoury Meal Ideas

Hi readers are we all excited for the up and coming bank holiday weekend?!
I would be lying if I said I wasn't I may have to work Saturday but I have Sunday and Monday off to spend with Dale, I'm entirely sure what we're gonna be up to but it will just be nice to hang out to be honest! Its been a bit quiet on here this week sorry about that, I have lots playing on my mind at the moment some good some bad. If I am honest I am feeling a little lost with one thing and another and until I can figure out what I can do to change that I will just have to stay a bit confused! 

I don't want to go on though so lets talk about something that always gets me smiling....food! I have been loving my savoury meals at the mo so I thought I would share some of my favourites that are easy to make, healthy and very tasty : )


I made this glorious vegan dish last night which had my tastebuds dancing! I roasted the cauliflower and broccoli in a little olive oil, garam masala spice and balsamic vinegar which sounds odd but really worked well. I made a dressing for the rice and chickpeas with extra virgin olive oil, balsamic vinegar, fresh coriander, cayenne pepper, lemon juice, salt and pepper...flavour punch for sure but again it really worked well. 


Usually I just roast my veggies in a little oil with salt and pepper but I have been loving making dressing lately so I decided to make on for my veggies with fresh coriander, olive oil, crushed garlic, fresh chilli, balsamic vinegar, salt and pepper this worked really well and topped with eggs made a great week night healthy meal. 


I made this quick and easy lunch yesterday by frying onions, mushrooms and eggs in a little coconut oil seasoned with salt and pepper, I added some cheddar once cooked and a side of cucumber to serve, delicious! 


Finally today I made this super quick lunch of John Wests basil and oil dressed tuna (review coming soon), cucumber and olives with a side of rice cakes and butter. This definitely hit the spot and those olives are amazing, a very tasty gift from my client! 

Mmmmmm I could eat these meals all the time and I shall be continuing to experiment with my dressings as the ones so far have turned out so good.

Whats your favourite fresh herb to use when cooking?

I love coriander and basil but I definitely need to branch out and try others!

    My favourite herb at the moment is chives. I love them.

  2. Love your foody ideas..lots of inspiration for me thank you. I love flat leaf parsley chopped and fresh and the smell of dill with anything and we use fresh mint in boiling water for tea it goes a lovely bright green colour not dull like dried mint tea bags also fresh lemon balm for tea. Hope you have a lovely chilled Bank Holiday.

  4. Hope you had a nice few days off :-) Lovely meal ideas - all up my street!
    I love coriander - such a fresh and delicious tasting herb. I cannot stand parsley though. As I child I hated parsley sauce so maybe that's why!

    1. I did thank you! I hardly ever use parsley either I used to use it when making garlic bread but that doesn't happen these days!
