Hey hey, are you enjoying your bank holiday weekend?! I am loving it, always good to have an extra day off especially when I can hang with the man even if it is grey and gloomy today!
We haven't been out or anything because we are saving money for our holiday (we go to Spain in just over three weeks!) so its been pretty quiet but thats fine by me, I am in need of the quiet life after a crazy few months!
If you have some time to spare on the last bank holiday of the year why not get in the kitchen, get your bake on and make these awesome banana macaroons! I made these a little while ago and have finally got round to sharing this recipe with you. I would love to take credit for these but alas these beauties are not my creation I found them over on the blog Empowered Sustenance, created by Lauren Geertsen. So thank you Lauren for bringing these into my world, they're awesome!
2 very ripe bananas, mashed until creamy
2 cups finely shredded unsweetened coconut
4 tsp. coconut flour
1/4 cup coconut oil, melted
1/4 cup maple syrup
1 tsp. vanilla extract, optional
3/4 tsp. cinnamon
Preheat the oven to 350 degrees.
Mix everything together.
Form into tablespoon-size balls and place on a parchment paper lined baking sheet.
(I used a Tbsp)
Bake for 18-20 minutes, until golden brown.
Let cool COMPLETELY until removing from the baking sheet, otherwise they will crumble.
These bad boys were a hit and can be stored in the freezer if they stay around long enough!
