And what a glorious Friday it is, I'm working at the shop today but having the beautiful sunshine beaming down with the door open is making me smile from ear to ear. I mentioned yesterday I had some yummy meals planned for the next few days that I would be sharing with you and this meal will not disappoint! I haven't really eaten much fish of late and I have to say I really miss it so when one of Dale's friends offered us some fresh cod fillets I said a big YES! I have never cooked with cod so I thought I's have an experiment and it turned out really well, if you like cod check this out:
Baked Cod with Crispy Garlic, Bacon and Mushroom Topping
2 cod fillets
4 thin slices streaky bacon
2 garlic cloves
Place cod fillets in tin foil, drizzle with lemon and season with salt and pepper, then wrap loosely in foil. Bake for 15-20 minutes.
While the cod bakes cut your bacon into little strips and add to a frying pan with the garlic, crushed.
Cook the bacon and garlic on low and slice your mushrooms into thin slices. Once the bacon starts to crisp add mushrooms and stir.
Keep the bacon and mushrooms cooking over a medium heat until cod is finished, this will get it nice and crispy!
Place fillet on plate and top with crispy bacon mix.
I served ours with steamed sweet potato (topped with a little coconut oil) and broccoli which was a perfect combo!
First ever attempt to cook cod and it was sooooo good! I plan on making fish cakes tonight if I have time so keep your eyes peeled for that recipe coming soon : )
This morning I was up early to go for a power walk with a client which was a great start to the day especially as the sun was already blazing.
