Hello, just a quick post tonight as I am super busy getting stuff ready for Glastonbury!!
I just had to drop in and share this awesome recipe with you though as its too good to keep to myself. I am very vocal about how I love lemon cake and when ever anyone posts a recipe I always think I should make my own too so here it is the best lemon cake I have ever made! It a carrot and lemon drizzle cake and it tasted bloody amazing!
Gluten Free Carrot and Lemon Drizzle Cake
1.5 cups gluten free plain white flour
2 tsp gluten free baking powder
1/4 tsp salt
1 cup Coconom Turmeric and Tamarind coconut sugar
2 small or one medium carrot, grated
1/2 cup coconut oil
1 lemons, juice and zest
For the drizzle:
1/3 cup Turmeric and Tamarind coconut sugar
1 lemon, juice and zest
Pre-heat oven to a medium heat.
In a large bowl mix all the dry ingredients including coconut sugar.
Grate the carrot and zest the lemon, add to bowl.
In a separate bowl combine the eggs, oil (melted) and lemon juice, combine wet with dry.
Pour cake batter into a loaf tin or bake tray and bake for 35-50 minutes depending on oven and tray used, check with a skewer after 35 minutes if it comes out clean take out cake.
Using the skewer make little holes across the top of the cake so the drizzle has somewhere to go.
Now its time to make the drizzle!
To a saucepan add coconut sugar, lemon zest and juice put over a medium heat.
Once the sugar has completely dissolved let it bubble up a little then remove from the heat, 3-5 mins.
Pour your drizzle over the cake and leave to cool on the side at least 20-mins, that sugar is hot!
Enjoy with a cuppa!
You could also enjoy with a dollop of greek yogurt which tastes fab I assure you : )
This cake turned out so good, it was moist and so lemony just the way I like it I will be making this again very soon! I also love the dark caramel colour from the coconut sugar in looks so rich and it tastes wonderful!
