Hello all and happy Thursday, the sun is shining and I am feeling great. There has been some ups and downs for me this week but I am staying positive and hoping everything will work its self out in the end plus there is no point worrying about things until they happen, right? I have come to learn over the past couple of years things happen in life that test us but more often then not it works out for the best and you feel stronger for it : )
Anyway lets not dwell lets talk about food! Glorious glorious food, oh yes my tastebuds have been having a party this past couple of days and I thought I would share my favourite breakfast, lunch and dinner meals with you cause they were so damn good!
I forgot how much I love nut butter on toast, obviously not being able to eat bread its not my first choice of breakfast but we had some leftover gluten free bread in the freezer so I toasted some up had a slice with almond butter and one with peanut butter plus salt and cucumber...delicious! This also really took my back to my childhood when I used to eat peanut butter on toast all the time.
Now usually I eat a smoothie out of a bowl for breakfast but yesterday I did a late workout and by the time I had finished and got cleaned up there was limited time before my next clients arriving so I whipped up a smoothie which could be drank whilst working.
In the blender: 1/2 cup frozen blueberries, 3/4 cup frozen mango, 1 banana, maca, wheatgrass, almond milk, water and coconut butter
This was a great blend of flavours but I am literally counting down the days until I get my new blender. The one I have is pretty lame to be fair and really doesn't make my smoothies smooth enough! Not long and I will have my hands on some new machinery, whoop!
OMG! This was soooooooo GOOD! The other day I made me and Dale this make shift pizza which turned out amazingly well and will be being made again quite soon I believe. It was delicious, filling, gluten free and well just plain awesome so I obviously have to share the recipe with you:
Gram Flour Omelette Pizza
Ingredients (serves 2):
1/2 cup gram flour
1/2 cup water
1/2 Tbsp garlic powder
1/2 courgette, grated
salt and pepper
coconut oil/spray oil
Pre-heat oven to 180. In a mixing bowl sieve the gram flour then mix with the eggs and water to make a batter. Add in the grated courgette and seasonings then mix again. Heat a small frying pan and add chosen oil once hot pour half the batter into the pan and cook over a medium heat. The batter will stat to bubble and firm up after 2-3 minutes. turn and cook other side then place omelette on a baking tray lined with tin foil. Repeat to make second omelette.
Sliced pickled garlic cloves
Top the omelette with tomato puree then your chosen toppings but if having fresh basil leave this off until you serve. Place the "pizzas" into the pre-heated oven for 8-10 minutes or until chess has gone golden. Remove and serve with a topping of fresh basil.
Such a simple idea but it packs a flavour punch and is perfect for those wanting pizza but have a gluten allergy. As I said I will be making this again very soon, loved it!
