Recipe: Coconut Flour Banana Bread with Thanks to EcoGreenStore

Hey everyone, so its back to the daily grind but at least most of you have a four day week right? Mine is a five day instead of six so I am happy with that, even though due to the bank holiday its a crazy busy week for me I like that also though so no complaining from me : )

Todays post is all about some products I was sent from an online store called EcoGreenStore.
I was lucky enough to be contacted by them and asked if I would like to choose some products to feature on my blog, after taking a look I was more then happy to say yes as they stock lots of things I love and some I have been wanting to try. Here's what I decided to get and the reasons why:


Coconut Flour - I absolutely love coconut flour for baking, making pancakes, thickening curries the list goes on and at £8.32 for 1kg that is a bargain for anyone that likes to use it. 
Giant Chocolate Buttons - I have one reason I love chocolate and this buttons are great for portion control, having a few after dinner is enough to finish the day on a sweet note : )
Carob Flakes - Again I use these for a sweet controlled treat, carob isn't for everyone but I love it and these are quite rich so you only need a little serving.
Raw Chocolate Tropical Spread - Perfect for adding to porridge or spreading on rice cakes this is some tasty stuff!
Apple and Mango Puree - I plan to use this in a baking recipe I have been researching so soon I will have a recipe to share featuring this. I love the idea of the mango flavour as well as apple, a bit more exotic then just apple. 
Coconut Butter - With a love all things coconut I just had to add this to my list, again I am thinking of using this in a recipe but it tastes great just off the spoon!
Rice Syrup - I have been using this lately when baking cakes, making rice pudding and in biscuits. I really like the taste as its not crazy sweet. 
Red Pesto - I bought this with a recipe in mind which i have already featured here on the blog, link below.
Gluten Free Lasagne Sheets - I got this because its been years since I ate lasagne and it didn't disappoint link to recipe below.

I choose some items with the intention to bake so here is a delicious banana bread recipe I baked using a couple of these products:

Coconut Flour Banana Bread
(recipe adapted from Gutsy)


Ingredients:

1 cup coconut flour (Organic Coconut Flour)
3 very ripe bananas
4 eggs
6 tbsp melted coconut oil
5 tbsp rice syrup
1/4 tsp sea salt
1/2 tsp baking soda
1 tbsp vanilla


Method:

Sieve coconut flour into a mixing bowl and add other dry ingredients, combine.

In another bowl add all wet ingredients and combine.

Add wet ingredients to dry and combine but don't over stir.

Add the mix to a parchment lined loaf tin and bake on a medium heat for 50-75 minutes, my loaf was cooked after 50 minutes so I would check at 50 and if your loaf is golden brown and a skewer comes out clean remove from oven or put back in until for a little longer.

This banana bread is bloody lovely the only thing that would make it better would be some added nuts, walnuts would be perfect so next time I will be adding in some extras. This cake is delicious as is though, very moist and fluffy with a big thumbs up from Dale too!

The products they stock are fab, there was loads I could choose from and I will be definitely ordering from them again as the prices are really good also, some great bargains to be found especially if your local health food shops are quite pricey like mine are. I have used herb before and goodness direct but had never heard of this site until they contacted me but I have to say I am really impressed and will be going back for some more items thats for sure!

  3. That banana bread sounds lovely- it is always good to find coconut flour recipes as I have not had the most success with it! I love that red pesto too, (and their vegan green pesto is amazing too).
