Hello Saturday Readers, I hope your weekend has got off to a good start? As promised I am here today to share my vegetable and feta crustless quiche recipe with you. I have to say its very simple but it tastes awesome and I hope you get a chance to try it out!
Mixed Vegetable and Feta Crustless Quiche
(serves 2 generously or 4 smaller portions)
1 medium red onion
2 garlic cloves, crushed
1 medium courgette
2 medium carrots
1 small red pointed pepper
6-8 slices of feta cheese
1/4 cup of water
salt and pepper
1tsp dried basil
Pre-heat oven to a medium heat. Slice the onion then heat a large frying pan and add enough coconut oil to cover the bottom of the pan then turn the heat down low and add the onion and crushed garlic. Let the onion and garlic sweat on a low heat and slice all of the other vegetables. After 3-5 minutes add all of the veggies and continue to cook for 10-12 minutes. While you cook the veggies add the basil and season with salt, pepper and cayenne pepper to your taste preference. Put the 4 eggs and water into a jug and whisk together. Once the vegetables have softened take of the heat and set aside while you line a loaf tin with parchment paper, add a layer of veg then put 3-4 slices of feta on top, add the remaining veg then again top with 3-4 slices of feta. Cover the veg and feta with the whisked eggs and bake on a medium heat for 25-30 minutes, the quiche should be bronzed and firm before leaving the oven! Give the tin a little shake and if it all firm (including the middle) then its time to serve up and enjoy!
I just ate mine with some sliced cucumber as it is a main meal serving but it would be grand with some potatoes and veggies if you were sharing it with more then two of you. Got to say this was sooooooo good and I could eat it again and again plus its really filling and light, a winner for both me and Dale and hopefully you too!
