As promised I have another recipe for you today for some tasty cookies. These cookies are gluten free, dairy free and melt in the mouth delicious!
Lemon and Thyme Cookies
175g gluten free plain flour
100g organic raw coconut oil
50g coconom original coconut sugar
1/2tsp gluten free baking powder
2Tbsp fesh thyme leaves
1 lemon, juice and rind
Pre heat your oven to a medium heat. Add flour, sugar and baking powder to a large mixing bowl and combine. If like me your coconut oil is quite hard zap it in the microwave for 15-20 seconds then stir in to the dry ingredients. Grate the rind of the lemon into the mix followed by the juice, (I use the juice of the whole lemon because I like a strong taste but you could use half), and the thyme leaves. Mix again until you form a soft dough. I then rolled out the dough and used heart cutters to make my cookies but you can just form balls and flatten in your hands if you prefer. Place cookies on a parchment lined baking tray and bake for 8-10 minutes depending on your oven, check after 8 minutes. The cookies will be quite soft still but they harden once cooled so take them out and cool on a wire rack.
Once your cookies have cooled I believe they should be enjoyed with a freshly brewed cuppa, feet up optional!
These really are good and so easy to make just my kind of baking! The lemon and thyme really work well together and they turn out soft with a little crunch to the sides hmmmmmm : )
