Apple and Coconut Crisp Plus A Lovely Testimonial

Well here we are at the end of another week which means we are half way through March nearly! This week has great, there has been the lovely weather, I have made some great food in the kitchen and all my clients are doing so well, which has left me feeling rather fabulous : )

I mentioned Skype training on a post this week and wanted to share this lovely testimonial from a Skype client of mine:

"My name is Farrah and I have been training with Tamzin over Skype for nearly a year. I first met her as a personal trainer at the local gym but I have really enjoyed the way Tamzin conducts her workouts and her enthusiasm. After training with her at my home as well, I have to move cities but wanted desperately to continue training with Tamzin. The only way to do this was over Skype. There are so many advantages to train online as you can do it whenever and wherever! Including my house, I have trained with Tamzin online from the middle of Wales to a London hotel room! As long as you have a good Internet connection and a bit of room, the workouts are easily done!
I have thoroughly enjoyed training with Tamzin using Skype and I have definitely noticed results as I can train with Tamzin as often as I want throughout the week - hassle free!"

Right onto some yummy meals I ate yesterday. First of all there was my post workout breakfast which by the way was insanely good, a little indulgent but in a healthy fat kind of way!

Apple and Coconut Crisp
(serves 1-2)

2 small-medium apples
1/2Tbsp Coconom's Original coconut sugar
1 tsp almond flour
2 tsp ground linseeds
1Tbsp chia seeds
3Tbsp desiccated coconut
drizzle of olive oil

Pre-heat your oven while you prepare the ingredients. Chop the apple then put all the ingredients into a mixing bowl, apart from the oil, combine, then drizzle with the oil. Stir again then pour onto a parchment lined baking tray. Bake for 10-12 minutes then set aside to cool for 3-5 minutes.

Once the mix has cooled a little serve up with some yogurt. I topped mine with full fat greek style yogurt. This was so good, plus it kept me going for hours!

Yesterday early afternoon I met up with Dale's sister to go for a walk with her little bubba and her dog. We went to a near by park and ended up walking the whole perimeter, a good hour. I didn't get home till about 2.30pm, another reason I am glad breakfast was so filling! 

When I got home I was greeted by a new pot of almond butter so it was only right to use it straight away! I made some veggies with eggs and topped it with almond butter. Delicious : )

The rest of yesterday was spent doing work on my computer, training a client and making soup, a very productive day. My Friday has been much the same with the addition of a new cookie recipe which I will be posting tomorrow, your going to love it!
