Madras Spiced Coconut and Butternut Squash Soup Recipe

Hey everyone, hope you have all been enjoying your weekend. I have a quick post for you today all about the latest soup I have been enjoying. This soup is so delicious I just had to share the recipe with you, so if your stuck for dinners or lunches then this makes a big pot and you can get at least 6 large bowls or 8 smaller depending on how much soup you like to drink down!

Madras Spiced Coconut and Butternut Squash Soup


Ingredients:

1Tbsp Olive Oil
2 small red onions or 1 large
1 garlic clove
2 carrots
2 sticks of celery
2 small sweet potatoes or 1 large
1 large butternut squash
2 cans of chopped tomatoes
2-3Tbsp Madras spice mix
1 can of full fat coconut milk
salt and pepper to season
boiling water

Method:

In a large pan add olive oil and heat over a low heat, chop onions and add to pan along with the garlic, crushed. Chop carrots and celery then add to the pan, cook for a couple of minutes then add the Madras spice. Stir the veggies then when they become sticky with spice add the tomatoes and simmer. Chop the sweet pots and butternut squash, while you do boil a kettle full of water. Once you have finished chopping add the coconut milk and stir then add the butternut and sweet pot. Stir then add the boiling water. Season with salt and pepper and bring the soup to the boil. Once boiling turn the heat down and simmer for 40-50 minutes. 
Cool, then blend and enjoy!

This weather we are having still calls for warming food and this soup is definitely warming, I hope you get a chance to try it out and if you do let me know what you think x

  4. Oh this sounds delicious! I love butternut squash soup. I think it's on a par with sweet potato soup. Love the addition of coconut milk, it works so well doesn't it?
