Veganuary

Hi all, I hope your first few days of the year have started off on a good note mine definitely have and I am already really excited for the coming year, it maybe grey outside but its shining bright for me!

I mentioned in yesterdays post that I would tell you all about my January plans for food and fitness. I am not setting myself and specific goals to be honest as they are easily broken and then I feel bad, saying that I have signed up to Veganuary! I thought this would be a good start to the year after all the processed and rich foods that have passed my lips I really need to get back to healthy clean wholesome foods and I think this is the perfect way : )

So for January food wise I am sticking to vegan foods as well as my gluten free diet, exercise wise I am just trying to do something everyday be it a walk or an hours sweat fest I just want to keep moving. Both of these are easy for me to do really as I love vegan foods and I am a personal trainer so I love to exercise! I feel the need to start this year on a health kick but I am not going to kill myself doing it plus I want to be able to continue my good work throughout the year without it becoming a chore!

I have been eating some yummy foods already like the above, mushrooms, sprouts and peas with vegan pesto hmmm this was really tasty and really filling perfect!

Veggie curry is becoming a regular in our home which is perfect for this month! This was made with coconut milk which made it so creamy and delicious, we had this curry with white rice but usually we use brown. I have to say though for convenience white rice is sometimes easier!

I also got my bake on earlier, I had two bananas desperate to be used up which were perfect for a banana loaf. I made a vegan and gluten free banana and hazelnut loaf which turned out perfectly! I will be sharing the recipe soon on my Dream Team blog page so watch this space!

It is not too late to sign up for Veganuary so if your up for the challenge why not join me and thousands of others this January! Obviously its not just about eating vegan it is a lot more then that so you can go to the site and get loads of great info about being vegan : )

Question:

Do you have any January goals/challenges?
