Yep I am here two days in a row, can you believe it?! Well thats something I am going to try and do more this year, blog! Life just gets in the way sometimes and as much as I want to come say hi it just doesn't happen but I am going to try a lot harder for 2014 and share lots more with you : )
Today I have another delicious vegan recipe to share with you which I enjoyed this morning for breakfast..........
Sticky and Sweet Coconut Breakfast Rice
In a pan I put:
1/2 cup cooked white rice
2Tbsp coconut milk
1tsp sweet (no added sugar) mincemeat
squeeze of lemon
pinch of salt
I heated the ingredients over a low flame and let the mix become sticky and when everything was melted together (about it was time to put it in pretty bowl and enjoy!
Before tucking in I sprinkled the rice with Coconom Original coconut sugar which by the way tasted awesome! This was just what I needed after a Skype workout with my client fist thing this morning.
The rest of my day has been all work on the computer for various stuff I have coming up : )
I had another scrummy vegan dish for my lunch too, a mini sweet pot topped with mushrooms, peas and a slice of hazelnut tofu. OMG this was really REALLY good and I will be eating this many more times!!
Right I have clients to train so I better get myself together, have a fab Tuesday folks x x
