Can you believe it, last day of the month!!??!!??
See ya later January, jeez this month has come and gone so fast looks like we are in for another fly by year! I would have to say my start to 2014 has been pretty awesome, I am enjoying my jobs, loving my workouts plus me and my clients are on a get fit mission and all of us have lost are unwanted Christmas weight gain now just for the rest!
Today I have another yummy recipe to share with you just as a reminder to enter my GIVEAWAY which ends tomorrow! This loaf was a little experiment.
I was sent some Rose Water ages ago to try out but wasn't sure what to use it in so I created this.....
Coconut and Rose Loaf
1.5 cups gluten free plain flour
2 tsp gluten free baking powder
1/4 tsp salt
1 medium courgette grated
1 cup Coconom Original coconut sugar
1/2 cup olive oil
1 Tbsp vanilla bean paste
1tsp rose water
1/4 cup desiccated coconut + extra for topping
Preheat your oven to a medium heat.
In a large bowl add all dry ingredients and combine.
In a separate bowl add the eggs, vanilla, rose water and oil, combine.
Grate the courgette then add to wet ingredients without squeezing the water out!
Add wet ingredients to dry and mix together.
Pour batter into a loaf tin lined with parchment paper then sprinkle with extra coconut. The batter is really runny but don't worry its supposed to be!
Bake for 40-50 minutes, check loaf is done by using a skewer, if it comes out clean its ready to come out of the oven.
Let the loaf cool, then enjoy!
The flavour of rose is subtle and the courgettes leave this cake moist and bouncy yum!
This turned so tasty that I am already planning the next but with added lemon, like a lemon drizzle but with rose too!! The great thing about this loaf is its rather healthy too, no nasties in here so you can eat your cake and feel good about it, win win!
