A New Found Love for White Potatoes and some Vegan Recipes!

Hi all, how are we? I am all good and am happy to report I am loving Veganuary! I have been eating some really yummy foods all of which have been welcomed by my weird tummy, no stomach weirdness at all!! My tastebuds have been rather happy too, its been a party for them the past few days! So here is what I have been eating with recipes, very easy dishes that can be enjoyed by all : )


Herby Roasted New potatoes and Parsnips: Chop new pots and parsnips then toss in some olive oil, salt and dried rosemary and roast in a pre-heated oven for 20-25 minutes on a medium heat. I served ours with some steamed broccoli and some cucumber. 


New Pots Salad with Peas and Onion: Steam some chopped new pots for 8-12 minutes depending on size, in the last few minutes add some frozen peas so they defrost. Chop a red onion and add to a bowl, add potatoes and peas as well as some olive oil, salt and pepper stir. I served the potatoes with some lettuce and cucumber. 


Veggies and Pots with Zest Pesto: Steam some chopped new pots and parsnips for 8-12 minutes depending on size. Once they are soft remove from pan and set aside, using the same pan add 2Tbsp of Zest pesto and some chopped mushrooms, when the mushrooms start to cook through add some spinach steamed pots/parsnips, stir and coat all veggies with pesto. Enjoy!


Veggie and Basil Tofu Stir Fry: Heat a wok and add some coconut oil then once hot add in your favourite chopped stir fry veggies. Heat the veg through and once it is nearly done add some chopped basil tofu. We had some rice noodles with ours but you could have rice or egg noodles which would work just as well. 


Rice cakes with almond butter no explanation needed other than this is edible even if it doesn't look it! 


Veggie with Pesto: Sprouts, mushrooms and courgettes fried in a little coconut oil and Zest pesto with a couple of rice cakes topped with sweet onion hummus on the side.

As you can see I have been eating good, tasty foods all of which are super healthy, filling and easy to cook! I have fallen back in love with white potatoes, I really went off them for years other then the odd bag of chips but I have to say they I am happy to put them back into my diet. I hope this post gives you some ideas of how you can make healthy meals quickly that taste awesome!

  4. Glad you are enjoying it! I'm not a white potato fan, I do love sweet potatoes though. Stir frys are my favourite easy vegan dish.

  5. I'm not a fan of white potatoes unless they're chips with ketchup! Or occasionally mash with gravy. I'd much rather have more protein instead. But your meals do look very tasty - and new potatoes are probably the best of the bunch for me, especially if they're lovely and crispy.

  6. I'm usually not that fussed on white potatoes, although sea side chips are a must! I did add some to a soup the other day to make it more filling for James and I loved the texture. New potatoes are lovely as well :-)

  7. I am not a massive potato fan- I quite like a jacket potato, but at home I tend to choose sweet potatoes as I prefer them. Don't know why people worry about eating them though, they are much better than any processed food. Love that pesto :)

    1. I never have been but going vegan has got me eating them again for some variety...if your gluten free and vegan your quite limited!! Zest pesto is the bomb!!
