Mustard and Garam Masala Cashew Rice

Hello! Apologies for being MIA but I have been up to all sorts which has kept me away from the computer unfortunately but I am back to fill you in on all the goings on from the weekend. 

A Skype workout with one of my clients started Saturday off in a good way, then I made my way to the Tattoo shop for a days work. 


It was pretty busy in the shop, people coming in to buy vouchers for presents, so I was glad when it died down a bit so I could enjoy my chicken! I've been eating really random foods lately and when I went to look at my photos it was a bit of a disappointment, nothing very exciting which is another reason I didn't pop in for a quick post I had nothing good to share! 


Once my working day was done I went home to get ready for a night out, I decided it was definitely time for some curls! We had some friends round for a few drinks before heading into town, to be honest it was more fun at ours then out so after a couple of hours we came home. 

Yesterday was spent getting over a hangover for the first part then I had to get myself alive again for another night out. This time we were off to my friends EmmaLi and Ross's for a festive get together. All that were invited had to bring a dish and here is what I made:

Mustard and Garam Masala Cashew Rice


Ingredients:

 2 cups white basmati rice
2 cups cashews
1.5 cups petit pois
2/3 Tbsp garam masala
mustard oil
olive oil
mustard seeds
1/2 lemon
salt and pepper

Method:

Cook the rice as per instructions then rinse under cool water and set aside.
Put cashews in a roasting tray drizzle with a little olive oil and cover with garam masala, make sure all the nuts are covered then pop into an oven on a medium heat for 10 minutes. 
Defrost the peas (if using frozen) in a bowl with hot water. 
Add rice and peas to a large mixing bowl and once cashews are done add those too. Dress rice with mustard oil about 1-2 Tbsp and sprinkle with black mustard seeds, salt and pepper. Finally squeeze 1/2 a lemon on top and mix it all up.
Enjoy!


This went down a treat and it goes perfectly with a roasted ham and salad which was also on the menu last night along with lots of other deliciousness : )


This rice is pretty awesome for breakfast too as I found out this morning. I had a small bowl and let it settle before doing a home workout which was definitely needed after last nights food fest! 


The other thing that was also needed this morning was a large coffee. I frothed up some soy milk for this bad boy and it was delicious! 

Today I am finishing off the last of my handmade Christmas gifts and maybe venturing out again tonight but this has not yet been decided......the weather is definitely putting me off! Tomorrow I have lots to do so if I don't get a chance to wish you all a Merry Christmas before the big day here it is now.....
