Lemon and Coconut Cookies Using Turmeric and Tamarind Coconut Sugar

This cold weather today got me in the mood to bake, I fancied trying out a little experiment with some delicious turmeric and tamarind coconut sugar from Coconom. A few people I have spoken to love coconut sugar but are unsure of how to use the flavoured ones especially the turmeric and tamarind. This recipe is easy and, if I do say so myself, very tasty. 

Without further a do, read on get inspired then purchase some of this wonderful sugar, bake with it and enjoy!


Ingredients:

3/4 Cup Coconut Flour
1/4 Cup Almond Flour
1/2 Cup Softened Coconut Oil
1/2 Coconom Turmeric and Tamarind Coconut Sugar
2tsp Vanilla Essence
Rind of One Unwaxed Lemon


Method:

Soften coconut oil in the microwave for 15 seconds then add to a bowl with sugar and vanilla, give a little stir then add flours. 

Add lemon rind, using your hands combine the mixture into a large ball. Take small amounts of the mix and roll into balls with your hands. 

Place onto a parchment lined baking tray or grease the tray with coconut oil like I did, I ran out of parchment! 

Bake in the oven on a medium heat for 7-0 minutes. 

Cool and enjoy! 


Hmmmmm, these are so good and healthy to boot! The turmeric and tamarind coconut sugar gives these cookies a yummy caramel taste without being too sweet and paired with the lemon is a great combo. These will be being made a lot more in my kitchen thats for sure.

  2. Wow! Thank you for introducing me to flavoured coconut sugar... I never heard of it before but it sounds like something I would LOVE to try. I use coconut sugar a lot in my baking with great success, I love it's natural caramel flavour. And what a beautiful and healthy sounding recipe this is... Really wanna try this one :-)
