Recipe: Red Pepper, Tomato and Chilli Soup

As promised I am finally here to share this awesome soup recipe with you. Its taken me a little while but I have some time between clients which means blog time! I made this soup for the first time last week then had to recreate it at the weekend because it was so damn good! I am not really one for spicy food but the little chilli kick in this works so well. Ok here is my recipe for:

Red Pepper, Tomato and Chilli Soup

1 large white onion
2-3 garlic cloves
1/2-1 red chilli - 
(depending on how spicy you like it!)
2 celery sticks
2 medium carrots
1 can chopped tomatoes
1/2 small butternut squash
1 small sweet pot
1 jar skinned red peppers - 
(I used ones from Lidl)
1 Tbsp olive oil
salt/pepper/herbs for seasoning
Boiled water

In a large pan add the olive oil over a low heat. 
Chop the onion and chilli, add to pan along with the garlic crushed, keep on a low heat so the oil and onion/garlic doesn't burn but heats through.
Chop the celery and carrot into very small pieces and add to the pan, stir.
Chop butternut squash and sweet pot, again very small then add to the pan along with the tinned toms, stir through still over a low heat. 
De-seed the red peppers, chop and add to pan.
Add seasoning then cover with a kettle full of boiling hot water. 
Bring soup to boiling point then simmer for 40 minutes.
Let the soup cool enough to be blended, enjoy with some crusty bread or rice cakes like me!

This soup is warming and delicious, perfect for the cold drizzly weather and it was a hit with the man so it must be good! I am loving soup right now so get ready for a lot more soup recipes coming your way : )
