Lots of Leftovers and Homemade Curry

Did you survive the wild winds? I did thankfully : )
It was a wild night on Sunday and a very blustery day yesterday but nothing too bad happened round my way thankfully. It did mean that Dale got to stay home yesterday which was nice. The past couple of days have been pretty uneventful, due to the weather I haven't been out much! 

Sunday morning I was up early to get to a client for 7.30am this worked out quite well because I had my skype client to train at 9am which meant I was more then ready to workout by that time. I had some rice cakes and peanut butter before leaving to train client number one and after my session had some fruit and yogurt a double breakfast day!


For lunch I had some leftover chicken, avocado and cucumber. Delicious and filling perfect lunch. 


For dinner I made a big pot of red pepper, chilli and tomato soup. I added some smoked paprika to this batch which tasted so good.


Yesterday I started the day with a session on skype with my client, got washed and put my pyjamas back on, it was a lazy day yesterday due to the wind. No clients came to me and I had none booked to go to so I got to enjoy the day with Dale : )
For breakfast I had a cup of coffee and a bowl of chopped apple, cottage cheese, cinnamon and almonds. Love this combo! 


Lunch was a bowl of leftover soup with rice cakes. For dinner I made my first ever curry from scratch which was absolutely delicious! I have always just bought curry powder but making my own from scratch was way better. I will be sharing this recipe soon so stay tuned for that it is totally worth the read believe me. 

Today has been super busy, back to back clients from 7am to 12pm then I walked to town to get some hair dye (watch this space) and other bits before walking back home. I had some leftover curry, chicken and avocado for lunch and I will be having soup for dinner, leftover heaven! I have to say homemade leftover curry is the bomb, tastes that much better the second day.

  1. Ooh, need to try the cottage cheese/apple combo! Cinnamon does make things awesome. The wind didn't affect me too much, just tipped over my recycling but I can just about cope with that :P

  2. Leftover chilli is always so good as the flavours seem stronger- we are having left over sweet potato chilli for dinner today- delish :)

  4. Love your posts, they are always so full of information I have to read them twice ha ha . Curry's are really rewarding as you can use really inexpensive items...pulses veggies and they always taste amazing and even better a day later...looking forward to your recipe xx

  6. The curry looks lush! I love adding coconut milk to make them all creamy and fragrant.
    And I'm all about soups at the moment. So comforting. I love making a big batch and throwing it in the freezer for when I'm having a stressful day and don't want to spend ages cooking.
