Delicious Double Cheese Veggie Loaf

Hello Friday readers, how are we on this wet and rainy day?
I am definitely looking forward to the weekend, well 6pm Saturday when my working week is done and I am free to chill and just be : )

I want to tell you about this delicious dinner I made for me and Dale last night it was a flavour bomb and went down very well. I was sent some Total Greek Yogurt and asked to come up with a recipe for the #TryTotal Challenge and this my friends is what I made.......

Delicious Double Cheese Veggie Loaf


You Need:
6 medium eggs
8-10 closed cup mushrooms
1 red pepper
10-15 black olives
2" thick slice feta
1/2 cup grated mature cheddar
salt, pepper, garlic, smoked paprika and dried herbs for seasoning
spray oil 


To Make:
Whisk the 6 eggs and greek yogurt together then put to one side. Slice mushrooms and pepper into small pieces, spray a pan with a few squirts of spray oil and add them.Heat for 2-3 minutes then sprinkle with salt, pepper, smoked paprika, dried garlic and herbs then cook for a further 2-3 minutes. Spray a loaf tin with oil then add the mushrooms and peppers, slice the olives into halts and add these to the tin also. Slice the feta into small chunks and grate the cheddar before adding it to the egg and yogurt mix and combine gently.Pour the mixture into the tin and stir to make sure the mixture covers the veggies completely. Bake on a medium heat for 30-35 minutes. Loaf should be golden brown on top, you can stick a skewer in and if it comes out clean then loaf is cooked. 
Serve with steamed veggies or salad or even on its own, it tastes that good! 


This was so good, I think the yogurt really helped with making a light fluffy loaf. Dale loved it and was more then happy to take leftovers with him today for lunch. This loaf is perfect for breakfast, lunch or dinner so if your stuck for something to make over the weekend give this a go, you wont be disappointed!
