Two Simple Quinoa Meals For One

Whoop Whoop! 
Its that time on a Saturday when I have finished work for the week and I am now free till Monday morning, not that I don't look forward to work because these days I do but free time is the best time! 

I am just waiting for Dale to get back from fishing so we can do a garden workout. I have a real sweat fest planned and can't wait to get to it! I have a couple of really easy recipes for ya today oh and a smoothie thrown in for good measure, so if you like quinoa read on.......

Simple Tuna and Quinoa Meal for 1

You Need: cooked quinoa, 1 can tuna, 1 courgette, walnut oil, apple cider vinegar and pepper

To Make: put quinoa, tuna and a grated courgette in a bowl an mix up. Pour over 2 Tbsp of walnut oil and 2 Tbsp mix again. Grind/shake over some black pepper and mix one more time. Sit back and enjoy!

I ate this last night for dinner and it was delicious I am in love with apple cider vinegar, oil and tuna mixes so good together. This was nice and easy to throw together too perfect after a long work day : )

This morning I had an early client so before she arrived I made a smoothie in a bowl. This contained 1 large handful of spinach, 1 small banana, frozen blueberries, 1 scoop of choc protein powder, 1 scoop of super eleven shake, tahini and ice. I blended it all up and chucked a few almonds on, yum! I actually only ate 1/4 before pouring it into a glass and slowly drinking it through the morning it was very filling. 

Simple Veggie and Quinoa Meal for 1

I have been training clients all morning so when lunch time came I was more then ready to eat some veggies! Here is my easy quinoa recipe no.2

You Need: cooked quinoa, 1 red onion, 1 courgette, 3 mushrooms, 1 Tbsp vegan pesto, optional handful of sweet chilli peanuts, coconut oil 

To Make: melt some coconut oil in a pan over a low heat, add chopped onion and let them sweat for a while. Chop courgette and mushrooms then add to the the pan and cook for about 5 minutes. Add vegan pesto and stir through once everything is coated remove pan from heat and stir through cooked quinoa and optional peanuts. Eat!

This was another super tasty and easy meal for one, definitely one to be cooked again.

Me and Dale plan to go for chips and a walk along the seafront tonight then tomorrow its off to Bluewater to try and find some bridesmaid shoes, fingers crossed we can find some! I am out all day tomorrow so I will have a guest post for you tomorrow with 5 fab tips to stay healthy this summer.
