Mex Grocer

Here I am as promised to tell you about my meal from Saturday night. As I mentioned in Mondays post  we had some friends round for dinner, I had been sent some foods to review from the Mex Grocer so thought it was the perfect excuse to have people round for dinner : )

I was sent some gluten free tostadas and some gluten free tortillas both made from corn but one pack was green due to being made with cactus leaves!

I have never really made mexican before and my guests were vegetarian so I got my thinking cap on to make a vegetarian feast! I was extra excited because I haven't eaten tortillas for years and never eaten tostadas. 

I bought some dips for the tostadas, sweet onion hummus, guacamole and a tomato salsa these went perfectly with the crunchy tostadas. I really loved them they taste great and are fab for a starter while you wait for the main meal. 

I made veggie quesadillas for the main:

You need: 
vegan pesto
feta cheese
olive oil

To make: fry some mushrooms and courgettes in coconut oil. Brush one side of a tortilla with a little olive oil and lay it oil side down on a baking tray lined with tinfoil. Top the tortilla with vegan pesto, a couple of spoonfuls of mushrooms and courgettes and some crumbled feta/chedder. Take another tortilla and again lightly coat one side with olive oil and lay on top oil side up, bake for 5-8 minutes in a hot oven and serve! 

These were a hit with everyone, especially the cactus tortilla definitely a favourite for all of us. This was really simple to make and so tasty, me ad Dale will definitely be recreating this meal again.

  3. Oh I adore mexican food! I love tostadas and I've been making quite a few mexican salad bowl things recently, I think those flavours are perfect for late summer time :-)

  4. I love mexican food! Especially guacamole! But any type of thing where you grill a filling (cheese/ veggies) between two flour tortillas is lovely.
