Two New Recipes!

Hey everyone, finally I have some time to sit down and tell you two fabulous new recipes and my weekend goings on. Its been a busy few days not that I am complaining but I do get a little edgy when I don't get to blog! 


Saturday started in a savoury way, leftover garam masala chicken with cucumber! So satisfying, I find this meal keeps me going for hours : )

After breakfast it was client time, I spent the whole morning and early afternoon training clients so when I got back at 3ish I was more then ready for lunch.


I had some leftover soup and a mushroom omelet. I love my leftovers! 

In the afternoon I was getting my Pinterest post sorted and preparing food for 2 new recipes.

Recipe 1: Turkey Meatballs!


These were insanely easy to make and very tasty : )

You need: 
turkey mince, onion, herbs, garlic powder 

To make: 
preheat oven. Put everything in a bowl and mash together with your hands. Take small handfuls and form into balls then place on baking try lined with parchment paper. Bake for 15/20 minutes turn after 10 to brown all sides.

We had ours on top of courgette and carrot ribbons in a vegan pesto sauce. I know your thinking vegan pesto? But I don't like the one that contains cheese so vegan it is! I will be making these again for sure, so easy, so tasty and healthy.

Recipe 2: Blueberry and Lemon Coconut Ice Cream


OMG highlight of my Saturday, this was just amazing you have to try it!

You need: 
3 cups of full fat coconut milk, 3 cups of frozen blueberries, grated rind from one lemon, 1/8 cup of truvia

To make: 
place all ingredients in a blender and blend. Then pour the mix into an ice cream maker and follow the manufacturers instructions. Once finished load up a bowl and enjoy because this is a taste sensation! Needless to say I will definitely be making this again.

We actually ended up going out for a bit Saturday night, it was one of Dales friends birthdays. It wasn't planned but we had a few drinks and it was lots of fun : )


Sunday was pretty lazy, a walk on the beach while we waited for Dales car to be valeted then we were off to Eastbourne. On the way we stopped for breakfast I had 2 eggs, 2 bacon and mushrooms then we went to see Iron man 3. The film was ok best thing was eyeing up Robert Downy Junior to be honest, ha

All in all this past weekend was lots of fun and I am already looking forward to the next. I have some clients turning up soon so I shall wish you a happy hump day and hopefully see ya tomorrow x x

  1. Oooh! This all looks so yummy but I am def. gonna try out that ice cream! I crave ice cream often so this would be a perfect alternative to milk and sugar!

  3. Youm to the ice cream. Coconut milk is such a great ingredient. I haven't made peoper meatballs in so long. I will have to have a go when I get the time.

  4. Mm both the meatballs and the ice look yumlicious! Especially impressed that you didn't needs eggs in the meatballs. Just need to find some coconut milk now :) Love the brogues too!
