Tandoori Butternut Squash Soup

Happy Hump Day! 
Lets face it though, its not really that humpy for most of us that only have one more day at work right!? 
Ahhhhhh yay to Easter and the bank holiday 4 day weekend, I'm pretty sure this has made the week a lot easier. I only have a day and a half to work at the warehouse so even better! I've been busy though with my personal training and blog stuff which to be honest isn't like work as I enjoy it so much! One day I hope that it will just be the 2 jobs I need........I can dream : )

Yesterday morning was super busy as I mentioned in my March Review post. So when lunch time came round I was glad to just sit and enjoy this delicious bowl of homemade soup. 

This soup is so good, the best batch I've made lately so I thought you might like the recipe:

Tandoori Butternut Squash Soup

You need: 1 large onion, 2 cloves of garlic, 3 sticks of celery, 2 carrots, 1 large butternut squash, 2 mini sweet potatoes (or 1 medium), 1 can chopped tomatoes,1 Tbsp olive oil, Tandoori spice, seasoning

To make: chop the onion and garlic and put in a large soup pan with olive oil over a very low heat. You want the onions to sweat not brown them. Add the tin toms, keep on the low heat. Peel the carrots, potatoes and butternut squash then along with celery dice into small cubes. Put all the chopped veg into the pan with the onions and top with a full kettle of boiled water. Add 1 Tbsp of Tandoori spice and season with a little salt and pepper and bring to the boil. Once boiling turn down to a low heat and simmer for 40 minutes or until veggies are soft all the way through. Leave to cool then blend. 

I love the flavours in this soup, I use a pre made Tandoori mix but if you make your own then even better! It has a warming hit that is prefect in this cold weather : )

Before dinner last night me and Dale did my Tuesday Insanity session. Luckily when he got home he wanted to do some exercise and I needed some motivation after my killer morning spin class so it worked out quite well. 

We had a protein packed dinner after our workout, veggie quinoa topped with soft boiled eggs with a broccoli side, perfect. 

This morning I was up early to get to a client for 6am and afterward I was craving something hot for breakfast to warm me up, its freezing outside! 

Enter a big bowl of banana and seed oats topped with cashew butter, amazing!
This was perfect and a very tasty way to start the day. 

I need to get my workout groove on and get sweaty then its off to talk tattoos before work at the warehouse. Talking exercise here is last weeks update:
