Broccoli Couscous + Brighton Foodies Festival Ticket GIVEAWAY!!!!!!

Hmmmmmmmm Snow?!
I'm guessing your all as fed up as me of this weather, waking up to a completely white garden was not the best start to the week. The only good thing is I have Mondays off at the moment which means I can stay inside away from the cold! But I'm not going to spend my post moaning about the weather not when I have some really great food to share with you and a fabulous GIVEAWAY!

Sunday's food was just glorious! You can see breakfast and lunch here but for my very tasty Sunday dinner see below......


I don't know about you but lately I have been seeing a lot of cauliflower 'rice' about on the blogs. A while ago I made a version I called Cauliflower Couscous which by the way was super tasty, I called it couscous because I blended it up into a fine meal. Yesterday I decided to try a different style 'couscous'......Broccoli! Yep I made broccoli and pea 'couscous' and it turned out really good:

You need: 1 small head of broccoli, frozen peas, herbs, seasoning, coconut butter
To Make: Put chunks of broccoli in the food processor with some herbs (I used basil) and whizz it up until it becomes a fine meal like couscous. Put it in a heated pan with some coconut butter and the peas. Heat until the peas are defrosted and its warmed through, add seasoning and a little more butter. 
Serve.

As you can see its very quick and easy to make! We topped ours with chicken stuffed with feta, wow it was a taste sensation! 


After dinner my Raspberry and Mango Crumble went in the oven : )


I cooked it for about 30 minutes and took it out when golden brown.


Served with 0% greek yogurt, I've been experimenting with dairy lately, milk is a no go area for me but goats cheese seems to be ok but I am still unsure about yogurt, more experimenting to be done! 


So today this happened, I have already mentioned my feelings on this so I wont dwell! 
After my white surprise I got up and did my first Insanity session of the week, as always a total killer but I love how hard it is. Never fails to turn me into a sweaty beast! 


Breakfast was 2 plain rice cakes topped with soft boiled eggs and some dry fried paprika mushrooms on the side. 


This was perfect refuel after my workout. 


Now I have something rather exciting for one of you lucky readers and one of your friends! 

Last year I attended the Brighton Foodie Festival held on Brighton seafront on Hove lawns. It was a gloriously sunny day, and even though there wasn't that much food we fancied for lunch I ate an awesome cookie and drank some refreshing homemade lemonade. Well this year the Festival is back and sounds even better! I have been lucky enough to be invited along with a friend, I'm taking my sister and already looking forward to seeing whats on offer. Its not just food either there is music and other goings on which make for a fab day. Now the really good bit I have 2 more tickets to giveaway to one lucky reader!!!!!!!
