Blueberry Pancakes For Shrove Tuesday

Happy Shrove Tuesday i.e Pancake Day!!!!!!!!!!!
I haven't had pancakes for ages so was looking forward to making some today. I was also inspired to make some a little more adventurous after being asked to take part in the Confused.com pancake challenge!


Apparently pancakes are one of the most energy efficient meals to make as they take a couple of minutes to cook which means I should be eating them far more often then I am, right?! 


Today I made blueberry paleo pancakes perfect after my morning run, so delicious and quite pretty if I do say so myself! But enough chat I bet you just want to know how to make them, read on and I will reveal all.........


Paleo Blueberry Pancakes

Ingredients:
1/3 cup almond flour
1Tbsp coconut flour
3/4 cup unsweetened almond milk
3/4 blueberries (I used frozen)
1tsp baking powder
1 egg
pinch salt
1tsp vanilla coconut sugar
coconut oil
tahini
pine nuts

Method:

Defrost blueberries.
In a bowl mix the egg, flour, baking powder, salt. coconut sugar and milk to make a batter.
Crush the blueberries in a separate bowl then add half to the pancake mix to get a pretty blue colour.
Put some coconut oil in a heated pan and melt, then add some batter.
Cook on one side for about 1 to 1.30 mins then turn for another 30 seconds ish.
Once you pancakes are cooked place them on a pretty plate and top with the rest of the blueberries, some toasted pine nuts and a drizzle of tahini.
Sit back and enjoy!!!!!!


Not having pancakes for ages made these all the more tasty. I love the fact they're blue, so pretty well to me anyway. I can be rest assured if you make these ypu wont be disappointed : )
