Hello, apologies I have been MIA since Thursday but its been a crazy few days.
I wont go into details but Friday started so well then just turned into a living hell, so I had a very quite evening with Dale, some homemade soup and sweet potato chips oh and a big bar of chocolate!
Luckily my hideous Friday got blown into space by a wonderful Saturday which turned everything around. 3 pieces of good news one of which is massive but you'll have to wait to find out about that...........
Saturday morning I had a little lay in then got up for breakfast, sesame ryvita topped with soft boiled eggs and ketchup : )
The day was spent viewing flats with Dale then going to the gym for a strength workout.
Dale made dinner for us which was really tasty. Chicken stuffed with nut pesto, wrapped in bacon served with veggies, yum! After dinner Dale went to his friends and I spent the evening with my flay mate Wayne.
We popped into town for a few drinks , there is a nice little bar which has recently opened that was warm and welcoming. I had one too many vodkas me thinks..........
This morning I had to be up to meet an old friend that is here visiting, so after a large glass of water, 2 paracetamol and a couple of rice cakes with almond butter I was ready to face the world!
I met Eva in Nero and had a soy latte, so needed!
We had lots to talk about and catch up on, it was lovely being inside all warm while the snow came down outside.
I got home to fresh pot of soup made by Dale, he's getting good at this cooking lark! I had a big bowl for lunch and then............
This happened! Well kind of, we shared the jelly minus the fruit and pine nuts, which just for the pictures! I made rice jelly which I will be taking to my sisters later for pudding, recipe will be up tomorrow on here and the rice dream site. This is definitely one you will wanna recreate so good!
I am currently watching Dexter with the boy lazing about till we are of out to my sisters for dinner, hopefully they like the jelly!

I used to love it as a kid but I find it way to sweet and preservative filled these days, I am super happy to have recreated this old favorite in a healthy and much tastier way!
