As promised on Instagram I am here today to share a new recipe with you!
Its been a while since I have posted a recipe about a snack bar but I think it was worth the wait. This recipe is for a very yummy energy bar which can be eaten in place of those high sugar and expensive snack bars you can buy on the high street. I hope you get the chance to make this and enjoy it as much as me.............
Tamzin's Raw Cacao + Coconut Energy Bars
Ingredients:
1 Cup each of Quinoa Flakes, Oats and Dessicated Coconut
1/2 Cup Raw Cacao Nibs + 1/2 Cup Baked Cherries
1/2 Cup each of Apple Sauce, Maple Syrup (or any syrup you prefer) and Walnut Oil
2 Eggs + 1TBsp Truvia
Method:
Put all dry ingredients into a large bowl and mix. Add in wet ingredients and mix again until combined. Pour batter into a baking dish and bake in an oven Gas mark 4 for about 30/40 minutes. Check after 25 minutes to be safe, the batter should be nice and brown on the outside. Check with a knife to see if it comes out clean once it does remove from oven and leave to cool. Then enjoy!
I cut mine into bars and stuck in the freezer so I can take one out each day for a yummy healthy snack. These are also wheat and dairy free as well as super quick and easy to make : )

I'm glad my 2013 goals are already on track, these bars are exactly what I was aiming for when I wrote in my Goals about making snacks. These save me money and are way healthier than shop bought alternatives!

Do you make your own version of something you can buy in the shops to save you money?
I will be making lots more snack bar varieties homemade lunches and all sorts of other goodies this coming year : )


That looks great! I never thought about making my own energy bars (I've usually shied away from Tracker bars and the like because they're so expensive). I might give this a go - looks really easy to make too. Thanks :)
