My Thursday

Wow its Friday!!!!!!!
This week has really flown by for me. I suppose having a new job does that! I am glad to report my first week is going great, I am there today too but its an early finish which is quite nice. 

I'm busy this evening so I thought I'd pop in and share my food from yesterday........


My day started with a big bowl of banana oats. I added a tsp of ground linseeds and topped with almond butter


Mid morning at work I had one of my energy bars and a mint tea


For lunch I had a tuna and rice salad. 
After work I had to pop home and get ready for the class I teach on a Thursday evening. I had some rice cakes and almond butter for fuel! 

Class was great, a real killer and definitely got my tummy looking forward to dinner!


We had some random stuff to use up so I made a mish mash for dinner. I fried some mushrooms and chickpeas in a little coconut oil then added a Tbsp of vegan pesto and cooked till brown this was served with broccoli and topped with some fluffy egg yolk. I had a couple of egg yolks left over from my egg white omelets so I fluffed them up and topped our dinner with it yum!

There was also some unpictured chocolate eaten : )

Right time to get to work, have a fab Friday!

After not eating oats for so long I'm making up time!

  1. Right now I'm smoothies, oats and eggs and I like it! But I do fancy a change this weekend - pancakes to the rescue I think!

  2. My go-to breakfast at the moment is Greggs porridge, shamefully. I don't give myself time for breakfast before work so I grab something quick on my way in. Not a good way to be; I need to be much more organised!

  4. Your food looks yummy. My go to breakfast at the moment is porridge made with almond soya milk with a swirl of honey and raisins. Warm and manageable at 5.45 in the morning!
