Cranberry, Coconut, Lemon and Almond Triangles

Hello, here we are at the end of another week, can you believe it?!
Jeez it will be my birthday soon then dare I say Christmas and new year, madness! 
But I wont wish my year away just yet, I have some yummy food, a fab recipe and something quite exciting for us bloggers so sit back and read on..........

This morning I started the day with a protein packed breakfast:


Spinach omelet with bacon and courgettes on the side. This was delicious, and kept my tummy happy for the morning. I had loads of emails to go through so that's what I did until the urge to back came over me!

Paleo Cranberry, Coconut, Lemon and Almond Triangles
(adapted from this recipe)


Ingredients: 2 cups almond flour, 1tsp baking soda, 1/2tsp sea salt, 1/2 cup pineapple sweetened cranberries, 1/2 cup unsweetened dessicated coconut, zest of 1 lemon, 1 egg and 2Tbsp honey


Method: Combine all the dry ingredients including zest in a large bowl. Combine the egg and honey in a small bowl. Add wet to dry and mix together to form a dough. Split the dough into 2 lumps and make 2 discs about 1" thick. Cut into triangle (like a pizza) and place on a parchment lined baking tray. Bake on gas mark 4 for 10 minutes then remove and cool.

These are not sweet but very tasty so you can enjoy them guilt free : )


While the cookies cooled I did my first Insanity workout! OMG I have to admit this killed me, I was a sweaty mess by the end! It really is a challenge, in a good way, I might feel differently in a week or so but we'll see!


For lunch I had leftover turkey with olives and veggies before popping round to see my sister.


When I got back I had to get my rice dream post sorted so this happened! Last month in my foodie penpal swap I received a little pack of mexican spices to add to hot chocolate. So I cracked that open and added it to a pan which was heating up some chocolate rice dream. I also added a tsp of raw cocoa to make it extra chocolaty!


I drank my hot choc with a side of cookies on the sofa which was bliss : )

Mine would have to be lunch with friends yesterday, was lovely catching up and having a good old gossip!

  1. Do you mean ground almonds when you say almond flour, or is that more finely ground?

  2. Best thing I did this weekend....made my own croissants! Hardly paleo friendly...or runner friendly really (!)....but yum :) x
