Paleo Food Loving

Good evening!
I'm going to run through this post super quick as The Great British Bake Off is on and I am a total addict! I wanted to share the foods I have gobbled the past 2 days:

Yesterday I had the most amazing coconut pancakes for breakfast

Fluffy pancake with strawberries and coconut cream is a total winner!

Giant salad and herby garlic chicken for lunch

Mini crustless bacon and mushroom quiches with roasted cauliflower and broccoli for dinner.

These were so yummy but very filling I only ate 2 : )

This morning I had the leftovers from last nights dinner for breakfast

And lunch was another chicken salad with tahini and coconut dressing!

I hope those of you that are also thinking of eating this way gets some good ideas from my foods, I am really enjoying it : )

Question:

Do you make pancakes the unconventional way?

I am loving coconut flour or almond flour pancakes so good!

  1. I always find coconut flour hard to bake with- it seems to suck up so much liquid and I have not had any real success with it.
