A Great Beach Walk + Cauliflower Couscous Recipe

Hello Sunday readers, I hope you are having a great weekend, I definitely am. I love having a full weekend off to spend with my favorite peeps. I had a lovely start to my Sunday I met my sister for an early morning seafront run followed by a very hilly power walk across the east and west hill in Hastings. We also threw in some chest presses and dips for good measure. When I got home I got Dale up and we enjoyed a delicious spinach and olive omelet with carrot sticks!

Today I am going to share my Saturday with you, I had another awesome day and this is what I got up to..........

I went to the gym at 8am to get a full body strength workout in before heading home for breakfast

I had a sardine and egg scramble with cucumber and mushrooms

I met my sister for a coffee, well she had coffee and I had a juice then we went to see our paps and did a good supermarket run

I really fancied an omelet for lunch so had a spinach omelet with carrot sticks and artichoke, this was so yummy which is why I had it again for breakfast today!

I spent the afternoon with Dale and in the early evening we went and picked up my favorite doggy friend to take him for a walk

We decided on a beach walk as it was such a nice evening, shoes off with sand and water between the toes.........nights like that you really appreciate living by the sea : )

After a good hour we walked back to the car with a tired out dog

I had such a nice evening and am looking forward to taking him out today too. Me and Dale are dog sitting for his sister over the next few days, yay!

When we got home I was real hungry and made me and Dale the best dinner! We had basil and cauliflower "couscous" with paleo friendly pesto and sweet potato chips. OMG this was really really yummy so here is my recipe for the cauliflower couscous its so easy!

Ingredients:

1 cauliflower head (small)
1 bunch of fresh basil
1dsp coconut oil
lemon
ground garlic
seasoning

Method:

Chop the cauliflower into small florets and put it in a food processor. Blend until the florets are in small chunks and add the basil and coconut oil. Blend until the mixture resembles couscous. Put a pan on the heat with a little more coconut butter then when melted add the cauliflower. Squeeze about half a lemon over the mixture and add a sprinkle of garlic powder, salt and pepper. Mix and heat for about 10 minutes.

Monday: Gym - full body strength workout + 2 mile seafront run
Tuesday: Bikram
Wednesday: Bikram
Thursday: Bikram + 1hr fitness group session - full body workout
Friday: Rest/ 40 minute walk
Saturday: Gym - full body strength workout - beach walk
Sunday: Seafront run + hill power walk

Wow a good week me thinks!

Right time to enjoy the rest of my Sunday before another super busy week, I have some exciting things for next week so stay tuned!

I am totally converted who needs potatoes!

  2. I love cauliflower mash and cauliflower rice, in fact you've reminded me I need to make it again soon! Your walk bare foot along the beach sounds perfect, I always wish Brighton had sand instead of pebbles!

  3. Ahh I haven't had cauliflower alternatives for ages, I love cauliflower rice. I would love to live by the beach.

    Again... you should just come round and cook for me ;) yet to try this cauliflower mash but will def give it a shot soon.
