Take Everyday As It Comes + Cookie Exchnage Goodies!

I am happy to report I am not suffering like yesterday, which just goes to show you have to take everyday as it comes and never presume things wont go your way. Yesterday my back actually felt like it was burning at one point it was so painful and my yoga class sucked! I kept having to sit down which never happens to me. I have a horrible feeling the 2 solpadeine I took before class had something to do with that as well I felt so dizzy and sick! I did feel better after practicing though, today I woke up and my back is still sore but nothing like yesterday thank god. First things first I got up and had my hot water and lemon : )

I then made a giant smoothie which contained: soy yogurt, frozen berries, fresh pineapple and spinach juice, coconut flour and a little hazelnut milk to thin. Topped with berry spelt puffs, raisins and peanuts.

After breakfast I got comfy in bed and continued to watch Sex in the City whilst letting a good layer of tiger balm sooth my back. I went to the 12.30pm Bikram class today which was session 36 of my challenge! As I mentioned today's class was way better than yesterdays I did every pose and felt good and quite strong throughout which made me smile. Positive thoughts and I know I will be back to my fittest self in no time!

When I got home I made a fresh juice from 1 orange, 2 apples, cucumber and celery.

This was delicious : )

I also had a protein packed lunch to help heal my muscles quicker!

2 boiled eggs sliced and put on top of 4 ryvitas, I would be lying if I said this saw no ketchup action after being photoed!

I also had one of my yummy cherry and carob cookies given to me by Maria my cookie exchange partner! I have had my goodies in the freezer so got one out to enjoy.

These are soooooooo good, chewy and flavorsome, the perfect cookie!

So its time to share with you my cookie exchange post, what I made and what was made for me:

I was sent a selection of Cooks & Co oils a while ago and the exchange gave me the perfect excuse to use some!

This oil is perfect for cooking and giving some extra peanut flavor but before we talk peanuts lets talk chocolate............

The first batch of cookies I made were based on a recipe from my new recipe book you can see here. They are called Carnival Cookies and should definitely be made and eaten! Here is the recipe for my version:

3 large ripe bananas
1 teaspoon vanilla extract
60g coconut oil
120g rolled oats
60g almond flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon fine sea salt
100g raisins
100g dark chocolate chips
20g popcorn

Mash the bananas in a bowl with the vanilla and coconut oil. In another bowl combine oats, almond flour, baking powder, salt and cinnamon. Add wet to dry then fold in raisins, chocolate and lastly the popcorn. Make balls with the cookie batter and place on a baking sheet then pop into a pre heated oven (gas mark 4) for 14-17 minutes or until browned

Next up Peanut Buttons!

These are actually my own recipe. I got the idea from the lady I work withs daughter but made them so I could obviously try them!

Tamzin's Peanut Butter Buttons

200g plain peanuts
200g spelt flour
100g icing sugar
peanut oil

Roast peanuts, leave to cool. Put peanuts in a processor and blend until smooth, Add flour and blend. Then add sugar and oil slowly. You need enough oil to make the mixture into a dense batter. Once your mixture is at the right consistency make into little balls and place onto a baking tray. Cook at gas mark 4 for about 8-10 minutes. These cookies cook pretty quickly so keep and eye on them. This makes lots of cookies but if you want more just double the recipe, its so easy and these taste very good!

Cookies baked and cooled it was time to pack them up!

I was so excited when my parcel arrived and when I opened it i couldn't believe my eyes it was goodie galore!

First up apple and mixed nut loaves! OMG these are soft, moist and delicious and perfect for pudding served with a little yogurt which is exactly what I had last night.

Cherry and carob cookies which as I said above are amazing and the perfect cookies!

Last but by no means least were these bars of loveliness! Peanut chocolate squares, well what can I say these are FABULOUS! I was really spoilt that's for sure, thank you so much for my amazing array of goodies Maria! If anyone wants to know how to make any of these goodies check out this post of Maria's!

I would definitely advise you to have a go at making the baked goods I sent for my swap they are truly delicious if I do say so myself!

  7. I am impressed that the peanut buttons was your own recipe :) They are amazing and I have eaten them all already! :) The carnival cookies were also fab (I had one to try)- I have put them in the freezer so I can limit myself!
