Pumpkin Loaf Recipe and Lots Of Cookies

Pumpkin Chocolate and Walnut Loaf

As promised here is my pumpkin loaf recipe, by the way you gotta try this!

You will need:

1 cup of spelt flour
3/4 cup oats
1 tsp baking soda
1 teaspoon cinnamon
1/2 cup roughly chopped walnuts
1 cup pumpkin puree
100g small dark chocolate chips
3/4 cup golden syrup (you can use any syrup I used this at Dales request!)
1/3 cup walnut oil
2 eggs
walnuts and coconut for topping

Method:

Pre heat oven to gas mark 4, generously butter a 8/9" loaf tin or use parchment paper like me.
Pulse oats in a processor to make a rough oat flour, then pour into a bowl with the flour, baking soda cinnamon, crushed nuts and chocolate chips. In a separate bowl whisk together the eggs, pumpkin, oil and syrup. Pour wet ingredients over dry and mix together but don't over stir. Pour mix into the loaf tin then sprinkle with topping of choice I used walnuts and coconut. Bake for 50-60 minutes then do the knife test. Press a knife into loaf and if it comes out clean the loaf is ready! Let it cool.

Then enjoy a slice with a freshly brewed coffee, amazing : )

Blimey that took ages! ha ha well there we go enjoy reading everybody's posts I certainly did! There are a few missing here as I did not have any photos sent to me from those bloggers and after a quick check on their blogs I can't find a post.

I will no doubt hold another swap later in the year maybe with a theme this time so leave it with me : )

Question:

Do you like to use veggies/fruit in your cakes?

I love beetroot in cakes, pumpkin, courgette, carrot, apple the list goes on! I find they make cakes really moist and yummy : )

    I love carrot in cakes, of course, and I did try a courgette loaf recipe which was lovely too. And I am going to make some lemon cakes later :)

  6. What a great idea! It's fun seeing the results of cookie exchanges because cookies are so versatile! I love apples in cinnamon raisin cookies and pineapple in cakes or muffins.

  8. Oh gosh this looks stunning!! I can't wait to try that recipe.

    The swap was so much fun and I loved the cookies that I got.

    I am starting the juice detox tomorrow. We'll see if I survive... :)
