Coconut, Chocolate Chip and Courgette Loaf

Hello finally!
I am not liking the new blogger settings at all plus it wont let put my photos in the right order which sucks! So you will have to bear with me until I can actually work things out! I had so many photos to share with you too : (

So my last post was kinda sad right?! I had the worst start to the week. There is lots of reasons for this but after lots of thinking and chatting to the people closets to me I have made some big decisions which will be revealed soon I promise. I am feeling way better and am looking forward to a much better week ahead! I did manage to get a couple of photos up and luckily its the ones of the cake I made and would now like to share with you : )

Coconut, Chocolate Chip and Courgette Loaf




Ingredients:

1 + 3/4 cup spelt flour
1 tsp baking soda
1 tsp cinnamon
3/4 cup dessicated coconut (unsweetened)
1/2 cup dark chocolate chips
3/4 cup golden syrup
1/3 cup walnut oil
1 medium sized courgette
2 eggs

Mix all dry ingredients in a bowl, mix all wet ingredients in a separate bowl. 
Grate courgette and add to dry ingredients, then add wet ingredients and mix. Add mixer to a loaf tin and sprinkle a little extra coconut on top.
Bake in the oven for 60 minutes. I checked mine after 40 then left on a lower heat for an extra 20 minutes as it was still wet in the middle. When your poker comes out clean the loaf is cooked.  Leave to cool then enjoy a thick slice with a cup of something hot : )


You could also have it for breakfast like me and Dale did today!!!
This loaf was so good and the courgette really worked at keeping it moist and yummy. 

Time to go watch some more Heroes now before bed, I am loving it!

Do you use blogger, having any issues with the new look/style?

I really wish they just left it how it was, working perfectly well!!!!!

  1. You know, I didn't like the new style much at first, but I switched over a few months ago and I've gotten quite used to it. I even like it better now!

    (this is my blogger upgrade version of the "it gets better" PSA :)

  2. You can put it back to the old layout! I hate it when things change and the new layout looked so confusing.
    This looks so yummy, I've never tried baking with courgette before. x

  4. Have you tried downloading Windows Live writer and using that instead? It's free and miles better than doing your posts on blogger I think! Hope your ok whatever big decisions you've had to make xxx

  6. I don't like the new blogger dashboard- it is what I use to read blogs and the list is really annoying now- I think I have missed loads. But not tried to do a post yet!
