Sprout and Swede Soup

Day 12. in your closet : )

Hello, another weekend come and gone with the blink of an eye. Its been all go this side of the screen but I have to admit I gave yoga a miss tonight. I finish at 5 and the class didn't start till six which meant an hour hanging around or come home to the warmth of my sofa........the sofa won!
I do feel a little guilty but I shall make it up in the week for sure!

Right onward.........

My Sunday started early at 7am with a fresh juice made from 1 apple, 1 carrot, lemon, ginger and a little broccoli stalk after my hot water and lemon of course! I them went to my clients to train her out in the freezing cold! It was not pleasant and next week if the weather is like this I shall suggest we go inside my hands felt like they were gonna drop off by the time I got home!

I don't start at the shop till 11am on Sundays which gave me plenty of time to make lunch and fix a breakfast smoothie around 10am. This was so filling and real tasty. In the mix:

juice from 1 apple, 1 carrot, 1inch cucumber and a celery stalk, 1 banana, 3 tbsp soy yogurt, baobab powder and 1/2 scoop of plain hemp protein powder. Topped with seeds : )

I walked to work feeling super full!

I didn't have lunch till after 2, I was so full from my smoothie! I had the last of my kelp noodles mixed with vegan pesto, tofu, steamed broccoli and leek.

I will definitely be getting some more of these noodles I love um!

The day was pretty uneventful and when home time came round I just didn't have the yoga drive so home I came. When I got in I had a vanilla chai tea and a small square of chocolate shortcake my housemate made : )

For dinner I had my sprout and swede soup and as promised here is my recipe:

Sprout and Swede Soup

2 medium onions sliced
1 garlic clove
2 cups of sprouts halved
1 small swede sliced
stock
(I use Bouillon Yeast, dairy and gluten free)
coconut oil
hot water

Heat the coconut oil, throw in the onion and garlic fry until golden brown. Add the stock, sprouts and swede then top up the pan with hot water. I then add a little salt, bring to the boil then simmer till veg is soft. About 30 minutes. Whiz up and enjoy, I then add more seasoning of needed : )

This really is a tasty bowl of goodness, I always make at least 3 portions so I can leave it in the fridge and have a quick easy dinner when I get in.

I just ate pudding and it was bloody lovely I shall be posting the super easy recipe tomorrow along with some pictures!

  1. The soup looks lovely..I made mixed veg soup and after blitzing it you get the creamy texture withiut needing to add cream which I think is fab. Will try getting some kelp noodles from Asian supermarker tomorrow x

  4. I looooove soups! In fact I should make one for dinner tonight. Love the fact that it's so simple to make a big batch - makes things so much easier for us busy people! :)
