The Best Coconut, Quinoa and Banana Pancakes!!!

Hello and welcome to my back to front post, back to front because I usually recap the previous day first but not today because its been pancake day!!!!!!!!!!!!
I wanted to share with you the tastiest pancakes I've had in a long time and couldn't wait till later in the post : )

Coconut, Quinoa and Banana Pancakes!

What you need:

coconut flour
quinoa flakes
1/2 ripe banana (optional)
1 egg
soy milk + water
vanilla stevia (optional)
coconut oil

What you do with the goodies:

Take a 1/3 measuring cup and put 2 heaped tsp of coconut flour in, top up with quinoa flakes then put in a bowl. Add 1/3 cup soy milk, just under 1/3 cup of water and 1 egg. Mix it all up then add the 1/2 ripe banana, this is optional but damn it tasted so good you should defo add it to the mix. I then added 2 drips of vanilla stevia but again this is optional. Heat a little coconut oil in a non stock pan then add some of the pancake mixer wait until the top has sealed then turn I made 2 whole and 1 mess so 3 kind of! On the side I had apples with soy yogurt and cinnamon cause I'm a little piggy but these tasted so good you could have them plain : )

After my insanely good pancakes I went o train a client. We decided to measure the calories she burns in my sessions today 515! Pretty good number me thinks!

Client successfully trained I went to meet my friend Tara for a coffee and catch up. I met her in costa and on the way I realised that this was the first coffee I would be having since 2011! It tasted amazing, I am a sucker for a soy latte (decaff!) and this one didn't disappoint

I wasn't hungry at all till about 1.30/2pm and considering I had breakfast at 8am those pancakes have staying power! For lunch I had a tuna salad and a little after I had 1/2 a banana with soy yogurt. Lunch also had fab staying power which was good news cause I went to Bikram at 4pm to get my sweat on!

I made a soup earlier in the day so when I got in all I had to do was heat the yummyness up. This was a mix of leek, swede and cabbage. Kind of sweet and thick just the way i like my soup : )

I am now enjoying the Brits with a cup of chai tea there maybe some chocolate eaten too, I'm feeling snacky..........


My Monday began with a 7am Bikram class, just the way I like to start the week.

Came home and made a giant smoothie, perfect post workout fuel and pre workout fuel, I went to the gym once this badboy had settled!

I did an hour in the gym, 5 min warm up on cross trainer, 45 minute med ball workout + 10 minutes on the summit trainer

Home again I freshened up (there was no water at the gym which meant no showers!!!!!) and had lunch which consisted of a bowl of soup and........

This bowl of joy!

Oh yes this really was a bowl of joy, I topped 1/2 a banana with soy yogurt and cacao crunch!!!!

After lunch I drove to Hastings to train clients, then I stayed at Dales. he made me some veggies mixed with quorn for a healthy dinner : )

I am already sorting out March's goals yoga is making another BIG appearance and the juice but more on that in a later post, I shall be back tomorrow with some reviews I have wanted to get up ages so until then x x x

  9. what are the cals for these pancakes? how many does the recipe make?

    1. Sorry I don't calorie count so have no idea I think it made 3 large pancakes but this was ages ago so I could be wrong!
