Peanut Butter Chicken

I'm here again kind of early as the internet at the moment is not playing fair and I am having to plug the main lead from my housemates computer into mine so when she returns game over!

How are we all by the way?
I am enjoying my day off but can't believe its nearly over, not fair : (

My day started with a delicious chocolate (coca powder!) and berry smoothie, which as always was delicious

And very filling, just what I needed as I had planned a pretty heavy exercise session!

Anyway, after a couple of hours to let my smoothie settle I was off to the gym:

5 mins summit, 40 min all over body circuit, total killer, I felt the burn! 10 mins run
90 min Bikram class!

Yeah I was totally done after this, lucky I had the day off!

Back home and I made the best lunch! Peanut Butter Chicken!!!!!

This was literally steamed chicken and veg mixed with a tomato vegan pesto and a tsp of peanut butter. WOW this was just what I needed AB FAB!

An hour or so later I had an urge for a little something sweet.......

1 apple sliced and topped with soy yogurt, cinnamon and a few seeds........

Oh and 1 almond! I know how to live!

I picked this giant pack of tofu up yesterday for a mere £1.95! Bargain me thinks : )

I have been marinating some in a concoction which will be baked for dinner, I will let you know how it goes...............

Favorite tofu marinade?

Lets face it, if you eat tofu and its not already marinated it needs something, I'm new to doing it myself so would love some ideas : )

  3. Peanut Butter Chicken sounds so good! And I love that red zig zag plate! I used to marinade tofu in reggae reggae sauce- so good! I really need to find new ways of marinading it, I usually just buy it already marinaded!

  4. I love sweet chilli sauce, soy sauce / shoyu, ginger and sesame oil for tofu but theres all sorts I love - 5 spice powder, garlic, mirin, the list goes on!

  5. I have never marinated tofu- I tend to use the silken stuff and blend it up, but I bet some kind of peanut marinade would be ince.
