A Favorite Blogger : )

Hello lovelies, its Saturday and I have a special post for you.
Today I have a guest post from one of my favorite bloggers. Laura from Keeping Slim and Getting Stylish.

Hi Everyone! I’m Laura from Keeping Slim and Getting Stylish. The lovely Tam has asked me to write a little guest post and I was more than happy to oblige!

My healthy living journey through food

2 years ago this was me:

I weighed nearly 15 stone and I wasn't happy. My diet consisted of lots of these:

No wonder I didn’t feel my best. I thought that to eat healthily would mean sacrificing taste, and for the first phase of my weight loss it did.

I was just happy to be losing weight but what I didn’t realise was that these foods weren’t nurturing me – not my body and not my soul. They provided very little nutrients and not much taste (I need taste!)

After a while I started reading blogs and I started reading books such as Michael Pollans In Defense of Food. I discovered that you could actually eat healthy food that tasted good and nourished your body at the same time! This was my ‘healthy tipping point’. I stopped eating fake foods and started eating food like this:

and even better, I actually lost more weight, felt happier and enjoyed my food even more than when I had been binging on the processed crap!
Now this is me:
I love my food! Here’s one of my favourite recipes – healthy and delicious!
Chilli Ginger Lime Chicken Stir Fry with Cashews (serves 1 hungry person)
  • 1 chicken breast, chopped into bite sized pieces
  • Selection of favourite stir frying veggies chopped into bite sized pieces or made into ribbons using peeler
  • 2 teaspoons of grated ginger
  • 2 teaspoons of chopped red chilli (I use lazy chilli from a tube)
  • 1 lime
  • 4 tablespoons of soy sauce
  • handful of cashew nuts

Create a marinade for the chicken with 1 teaspoon of both the ginger and chilli, the juice of half the lime and 1 tablespoon of soy sauce. Leave the chicken to marinade for a few hours. When ready to make, start by quickly toasting the cashews in a dry wok for a few seconds. Put cashews to one side and fry the chicken in a little oil, adding the veggies depending on how long they take to cook. I used broccoli, asparagus, kale, carrot, courgette and red pepper. Make up a sauce for the stir fry using the rest of the chilli, ginger, lime juice and soy sauce. When the veggies and chicken are cooked transfer to a plate and top with the cashews followed by the sauce. Start eating!

  6. Laura, I love that you mention food nurturing body *and* soul. In the obesity-scare obsession with not having a food obsession, we forget that food isn't just fuel. It's a pleasure to prepare and to eat too. And knowing so is just as important part of a healthy relationship to food as getting our fruit and veg in. Great to see before and after pics side by side too -- wowza! :-)
