I GOT THE JOB!!!!!!!!!!!!!!

Good morning readers, the sun is shining and I've just had a delicious breakfast, the day has started well, oh and I thought you might like to know...............
I GOT THE JOB IN BRIGHTON!!!!!!!!!!!!!!!!
More on that in a bit lets rewind to yesterday, I started the day with a chocolate protein smoothie topped with raisins and puffed oats. In the morning I had an interview in Bexhill, a small town about 20 minutes from my own. It was in an all ladies gym called curves. It is a worldwide organization and is based on a 30 minute circuit. The interview went pretty well but the whole time I was thinking "please don't let me have to work here!". Yep it was definitely not me!

After my interview I drove back to Hastings and met my friend Leanne for coffee. I had an iced coffee with soy milk.

Leanne also brought her little lady along too. Leasie decided to stick her tiny tongue out as soon as she saw the camera!

We chatted for ages then popped to the shops for a bit, the sun was shining yesterday too, can you tell!?

I didn't get home till 3pm so was uber hungry, I decided noodles were the way to go......

Egg noodles, prawns, sweetcorn, peas and olive pesto = YUMMMY!

After lunch I got a call from the Brighton gym confirming I had THE JOB!!!!!!!!
Oh my god, I can't actually believe it, before I went on my 6 week course I actually said my dream would be to pass, get a job in Brighton and move there. Well I have done 2 out of the 3 so I'm on the road peeps!

A while after the excitement had died down I had 1 of my healthy cookies and some soy yogurt which was perfect energy food.

I went to the gym early evening for an uber workout:

30 minutes stair/air walker
45 minute spin class
1hr pump class

I have upped my weights loads since starting that course : )

Obviously when I got home I was ravenous! Luckily I made a stew in the day which was prefect for re-fueling:

Red Lentil + Swede Stew

1 onion
3 garlic cloves (small)
1 large swede
2 handfuls of spinach
1 cup red lentils
1Tbsp tomato puree
1 stock cube (Gluten,Yeast,Dairy free)

Lightly fry garlic and onion till golden brown. Add a little water and the stock cube.
After dicing the swede add it to pot along with spinach and lentils. Bring to the boil add tomato puree. Let the stew simmer for 45 minutes. Enjoy!

I had a slice of of rye toast topped with almond and linseed butter, which might I add is amazing thank you Debs!

After dinner I had pudding as always! Fresh strawberries and a sliced apple topped with soy yogurt, cinnamon and a couple of spoonfuls of granola : )

I was absolutely warn out so had a shower and went to bed about an hour later

Today I woke up and went down the garden to pick some fresh fennel and mint for a morning cuppa. It was so warming and refreshing : )

A while later I made a vanilla and carob smoothie topped with granola

There isn't much of my granola left, I have been loving this stiff obviously!

I have just returned from the gym. I ran there which is about 1 mile did a 50 minute spin class then ran back! It was a really hard spin session but the run after was actually quite a nice way to stretch out.

I have lots to do today, I need to sort out what I want written on my PT board at the new job which I'm finding pretty hard. It has to be done by Friday lunch time, I best get my thinking cap on...............

Favorite noodle dishes please?

Mine is pretty much anything thrown in as long as there is veggies and some kind of sauce I'm happy!

  2. Congratualtions! Great news! I think my favourite noodle dish is simply prawn and sweet chilli dipping sauce stir-fry with the usual veg.

    I'm shocked that the sunshine is still happening in your neck of the woods since I'm back in LA and everyone knows that I take the sun with me! ;-) Actually, the weather is better where you are than where I am! Cute baby!

    Noodle dish: probably a pesto noodle.

    Umm... I'm seriously going nuts over rice paper spring rolls at the moment, so when you mentioned noodles I was like "ooh, chop them up and stick them in spring rolls! Yes! Yum!" haha. So good though!
