Walnut Wonderful

How good does this baby look!? My smoothie had some fab volume today, it nearly didn't fit
in my bowl! I also had a boiled egg with breakfast you can probably just see it in the top right corner.

After breakfast I decided to walk the seafront way to work as the forecast said sun and I love the sea in the sun so off I went........

They didn't lie, the sun was out fully beaming down on me.........

As I walked along the seafront I found myself daydreaming of summer and wishing I didn't have to work and could go for a long run. I really hope my back gets back to normal sooner than later I long to exercise : (

I got to work ready for my day of retail hell and around 10am I drank my prepared green monster, this included - 1 apple, slice of fresh ginger, low lacto milk, water and 1 scoop of amazing meal, delish

I also had a protein bar that went down to quick to be documented!

Lunch was my usual soup, rice cakes and vegan cream cheese accompanied with a fitness magazine.

I finished work at 4.30pm and walked home the hill way! I want to exercise!!!!!

I was peckish and it was to early for dinner so I had some carrot sticks and hummus.
I had about a tbsp of hummus form this pot

Dinner was scrum, scrum scrummy! I heated up some lamb mince in a pan then added some of my lentil and sweet potato curry, teamed with a beetroot and steamed greens, what a perfect dinner. I was asked to share my curry recipe so here goes, its not really precise as I just kinda made it up as I went along but I'll try my best:

Lentil and Sweet Potato Curry

1 onion
2 cloves garlic
olive oil
1 sweet potato
1/2 c. red split lentils
1 parsnip
2 carrots
1/2 c. frozen peas
curry powder
turmeric, ginger, cinnamon, mixed herbs

Chop then fry the onion and garlic in olive oil, rinse lentils and add once onions are starting to brown. Add sweet pot, carrots, parsnip and peas then add boiling water (enough to nearly cover mixture). I then added tbsp of curry powder, extra turmeric, ground ginger, cinnamon and mixed herbs stirred it all in and brought to the boil. I then left it to simmer for about 30 minutes. The mixture will get pretty stodgy but that's the way I like it, enjoy!

Pudding, soya yogurt and homemade chocolate walnut butter, man this really turned out well

I feel the need to get on the pj's and get into my warm heated bed, I'm working tomorrow but I shall get up and go for a long morning walk me thinks, hopefully the sun will come out to play again : )


What breakfast fills you up for the longest time?

My smoothie and egg didn't do as good a job as yesterdays porridge and egg I think I shall be heading that way tomorrow but who knows

Do you live near the sea or wish you did?

I love living by the sea its so calming listening to the waves on a clam day.
I hope to move in my near future but I'll definitely be staying by the sea


  1. I don't live near the sea! I'm in the East Midlands... wouldn't change it for the world... it's my home. :) How many servings does that curry thing make approximately aaaand would it freeze well? Thanks!

  3. Scrummy? I LOVE your descriptors! Did you make that up, or is it something people say where you're from?

    I lived by the ocean for 3 years. Honestly, I could take it or leave it. Where I lived, it was unbearably hot and humid. Plus almost every house was roach infested. UGH.

  4. Such a beautiful walk to work! We live pretty close to the Ocean. We can't walk there, but its about a 12 minute drive. I go pretty much every weekend starting in the Spring. Lots of lovely eats. Hummus and veggies are just so good together. And love the looks of that curry! Hope you have a nice Sunday :)
