Staying Positive is the Name of the Game

I didn't lie yesterday when I said round 2 of smoothie heaven would be today. The only difference today was I had a topping of pumpkin seeds and a tsp of tahini, delicious indeed.

I had an appointment today with the Chinese doctor who gave me a deep massage, it was intensely painful but really did loosen up my tight muscles. I have realized I MUST not do any other exercise except walking as my back is just not getting better so total rest is needed which is a total bummer but if it gets better quicker the quicker I can get back to working out. I so can't wait to get back to normal. I have to stay positive so my body fixes itself. My plan of action is to just go for a walk everyday on top of my walk to and from work and hopefully that will help with my weight gain fingers crossed!

After my back appointment I walked to work and on the way scoffed a boil egg no picture!

I got lunch around 2.30pm and dug into my beef and veg in a sweet pepper sauce

Followed by a crisp apple. I managed to do all my targets for the day so got to leave work early
which was a bonus : )

I walked home and pooped into the store to pick up some bananas and balsamic vinegar.
Finishing early also gave me time to change my bed covers. I love getting into fresh clean and crisp bed linen its the best, don't you agree?!

For din din's I had a bowl of Sweet Potato and Swede soup with beets and rice cakes on the
side. I drizzled balsamic vinegar onto my soup and it totally gets a thumbs up, tasty tasty!

I had a protein bar with homemade raspberry frozen yogurt, delish I think I may see another bar in my future.......... ; )

Sweet Potato and Swede Soup

1 onion
2 cloves garlic
1 medium/large sweet potato
1 small swede
1 vegetable stock cube
seasoning + mixed herbs
olive oil

Chop onion, garlic and put into pan with olive oil. Brown the onions and garlic to add extra flavor to the soup. Add potato, swede, stock and fill pan with boiling water. Bring soup to the boil add seasoning then leave to simmer for about 45 minutes.
Once cooled a little whiz up and enjoy.

What is your favorite ice cream flavor?

Mine has to be mint choc chip but I'm also getting pretty fond of my protein ice creams too!

  1. I love birthday cake ice cream. Those tiny swirls of icing are heaven. :-)
